Having finally found the keto spice cake recipe that I'd lost we made it on Monday.
It includes 5 large eggs and makes 14 slices. But I cut it into 16 because that is much easier.

I'd usually make half the quantity because 16 pieces of cake is a lot for one person, and even stored in the fridge it goes moudy after 6-7 days.

But in addition to the planned visitor yesterday, one of my friends who loves volunteering* for jobs arrived to take the cat run to the tip for me.
He got two pieces, my visitor was fed some plus two to take home. That left me with a more reasonable quantity.

This recipe is almost identical to the one I used to have, except the frosting which I didn't use.

In spite of the heat I will be putting the oven on today.

I need keto cake after a bad few days.

At least it's a mini oven (combi microwave) so it heats up and cools much faster.

I could buy keto cake, but I'd have to order online and wait several days plus they are very expensive and higher in carbs.
