I have chia and flax around and I wanted to add applesauce anyway. Substituting each of those for one egg will increase prep time a lot, but will hopefully give me a quick, simple, great, vegan cake
It was from a mix, but I didn't totally screw it up, so the carrot cake cupcakes I made today were ugly, but tasty and moist.
The batter was so thick it was hard to portion out. I'll need to get better at that. Maybe the two-spoon method instead of trying to use the mixing bowl spout? Anyway, I overfilled all the normal size tray divots, and underfilled all the jumbo size tray divots.
I wonder how to take out the eggs from the process and make the mix vegan. Or maybe I should just try a "from scratch" vegan recipe?
Does anyone use a soak for cupcakes, or is that basically only for layer / sheet cakes?
