@aronow I like Colby cheddar dusted in cornstarch melted into some finely minced, sautéed onion with #GaramMasala spice to which a can of evaporated milk has been added and heated (only need to just simmer to set the cornstarch). It’s super-smooth, and not claggy. I think it is better if you thin it with a 1-3 Tbs of milk, or water for later use, but it is great on day 1.
