    As summer winds down, the prickly pear cactus (Opuntia) is starting to ripen its fruit. I have 5 large cacti in the front and back garden, and they have reached maturity, so our harvest of fruit has been growing each year. Today, I spotted over 40 fruits at various stages of ripening. I am guessing they will all be ready for harvest once I return from a 2-week trip to Australia in September.

    This time I made all the decisions so I’m quartering them and stewing them with no other ingredients. Ideally fresh lemons, but probably just some citric acid if I can find some.

    I really miss having access to a steam juicer as this would be the correct tool. Food mill and chinois will do.

    Also the colloquial American name for chinois is still “china cap”

  14. Prickly pear juice from prickly pears from one of the paddle cacti on the lane. I think the gals added some sugar and cooked it.

    Half lemon, a little less than 1/3rd of the juice, some sort of carbonated water (used the soda stream - love this btw). I’m guessing this would also make a fantastic cocktail if that’s your thing.

    Burning off the spines is by far the best way to go. My hands still got a load of spines in them, gonna go pick some more tomorrow in spite of that.

  15. The Prickly Pear Cactus started blooming yesterday. Cooler and a lot nicer out today. Got off my duff and cleaned up around the plant. Didn't get it done last year... Pulled out, cut off weeds and grass trying to take over its spot. Fished out a bunch of old leaves and dead material with barbecue tongs.

    Only had to remove maybe a dozen little needles from my fingers. I bring the tweezers out along with the gardening tools. They're ALWAYS needed😆
