Well, there are a lot of good examples but my personal favorite is of course the Borderlands 3 "When the Hunter Came to Town" from the Bounty of Blood DLC, performed ingame by a musician you rescue from the bandits and who retells the events of that particular story at the local saloon while you are still up and about trying to prevent disaster.
It's a perfect fit with the whole Borderlands vibe in general. In moments like these, the series is at its best.

The first time I noticed this, I nearly fell of the chair. This is such an amazing detail and really helpful when you're playing the game.

I've posted the clip from Saints Row 3 of the Player Character singing Sublime with the character Pierce.
Well in Saints Row IV, they return to this funny gag and do Paula Abdul Feat. MC Skat Cat "Opposites Attract". It then switches songs to Biz Markie "Just A Freind" where the enemy comes in and ruins it in a hilarious way.
I went with Laura Bailey's voice for the MC, because she's the one I always used.

There's only one option for me to suggest of course, and that's the famous opera scene from Final Fantasy VI. Back in 1994, Squaresoft weren't about to let a little thing like the SNES sound chip not supporting voice recordings stop them from creating a stunning performance anyway! Even the old, original chiptune version still sounds gorgeous today.
